One food item that is missed by many living a ketogenic lifestyle is bread.  I’ve played with some bread recipes and I like an almond flour bread best.  The coconut flour varieties are denser.  I’ll post a baked bread variation to this recipe in the future, but wanted to share a really quick minute bread recipe.

It is possible that with my prolonged keto lifestyle my taste buds have changed.  Maybe you won’t like this bread, but I think it is perfectly acceptable.  Maybe my expectations are just realistic about the bread alternative.  This will not replace a delicious piece of just bread with butter.  However, it is amazing for sandwiches.  Sometimes you just want to pick up your food and deliver it to your mouth easily with no mess.  Sandwiches and buns have spoiled us with the convenient mechanism of delivery.

For this recipe, you just need a microwave.  I use the kids sandwich lunch boxes to make bread in a regular bread size.  You could use a mug or whatever microwave safe dish you like.

Ingredients:

  • 4 tbsp almond flour
  • 1/2 tsp baking powder
  • 1 egg
  • 1 tbsp butter (melted)
  • Pinch of salt
  • Pinch of stevia

Instructions:

  1. Put butter in microwave safe dish and melt a few seconds.
  2. In a mixing bowl, stir in all ingredients.
  3. Dump mixture into sandwich container for shape.
  4. Microwave for 1 minute.
  5. Take out and cool.
  6. Slice in half.
  7. Toast.
  8. Make sandwich and enjoy!

It couldn’t be any easier for a quick sandwich!  I love egg salad or avocado & tomato sandwich.  My husband prefers a warm salami sandwich.  The possibilities are endless (grilled cheese is next on my list).
